Goji Berry Quinoa Breakfast Bars

Morning all,
it has been very cold here in NYC the last few weeks and when it is cold I do not enjoy going outdoors very much. So what do I do to stop myself going crazy I spend a lot of time cooking & baking! My latest challenge these goji berry quinoa breakfast bars.

What You will Need:
2 Bananas
1 cup of quinoa
2 tbsp of black chia seeds
1/2 cup of coconut flour
2 tbsp of coconut oil
1/4 cup sunflower seeds (or sesame seeds)
1 tbsp of cinnamon
1 tbsp of vanilla extract
2 tbsp of maple syrup (or raw honey)
1/3 cup of Goji berries

pre heat oven to 350f and grease a deep baking dish
in a bowl mash up the bananas, then add all the ingredients including a 1/2 cup of water. Mix using a wooden spoon until the mixture sticks together.
pour the mixture into the dish making sure to even it out.
Bake for 40-50 minutes until golden brown on top. Remove from tray and let it cool before cutting it into bars. Then freeze for the rest of the week.


They turned out very well if I do say so myself.
