So, it is that time of year again where summer is over and everyone is heading back to school and uni. I loved my experience in Uni. I loved everything I studied. I just finished a book in the space of a day. If I start a good book I find it impossible to put it down. I loved this story so much I just felt i had to write about it. The novel is Me Before You by Jojo Moyes. You may have heard the name recently, they based a movie on it. Which is coming out in June. it stars Emilia Clarke (Khaleesi lol) and Sam Clafin. And yes that is mainly the reason why I wanted to read the book, I’ll admit the trailer looked good. I read way to many fantasy/ Si Fi books, it was time for a change.
I am currently sitting in the hairdressers waiting for my highlights to set. What better way to spend this time than to write a post? I thought I’d do a little “currently” type post. it has been very cold here in NYC the last few weeks and when it is cold I do not enjoy going outdoors very much. So what do I do to stop myself going crazy I spend a lot of time cooking & baking! My latest challenge these goji berry quinoa breakfast bars.
What You will Need:
1 cup of quinoa
2 tbsp of black chia seeds
1/2 cup of coconut flour
2 tbsp of coconut oil
1/4 cup sunflower seeds (or sesame seeds)
1 tbsp of cinnamon
1 tbsp of vanilla extract
2 tbsp of maple syrup (or raw honey)
1/3 cup of Goji berries
pre heat oven to 350f and grease a deep baking dish
in a bowl mash up the bananas, then add all the ingredients including a 1/2 cup of water. Mix using a wooden spoon until the mixture sticks together.
pour the mixture into the dish making sure to even it out.
Bake for 40-50 minutes until golden brown on top. Remove from tray and let it cool before cutting it into bars. Then freeze for the rest of the week.
They turned out very well if I do say so myself.
